Summer is the season of juicy, aromatic fruits. Peaches and apricots, with their sweet taste and high vitamin content, are ideal ingredients for a refreshing salad. This salad combines the sweetness of fruit with the saltiness of feta, the crunch of nuts, and the freshness of greens, creating a balanced and complete dish.

This salad is not only delicious but also highly adaptable. Depending on your Hippocratic type, you can modify the ingredients to better support your unique physiology.

Base Recipe (for 2 servings)

  • 2 ripe peaches
  • 6 ripe apricots
  • 50g feta cheese (or anthotyro, plant-based cheese)
  • 60g mixed greens (arugula, spinach, lettuce)
  • ½ cup fresh mint, finely chopped
  • 2 tbsp walnuts or almonds, roughly chopped
  • 2 tbsp sunflower or pumpkin seeds

For the Dressing:

  • 2 tbsp olive oil
  • 1 tbsp apple cider vinegar (or balsamic)
  • 1 tsp honey or grape molasses (petimezi)
  • ½ tsp mustard
  • Salt, pepper

Method

1. Preparation: Wash all ingredients thoroughly. In a bowl, prepare the greens and mint.

2. Cutting: Slice the peaches and apricots into thin wedges or cubes (as preferred).

3. Assembly: On a large plate or in a salad bowl, layer the greens. Add the fruit, crumbled feta, nuts, and seeds.

4. Dressing: In a small bowl, whisk together olive oil, vinegar, honey, mustard, salt, and pepper. Drizzle over the salad.

5. Serving: Toss gently and serve immediately.

🧬 Variations for Each Hippocratic Type

1. Choleric (Hot & Dry) – Cooling & Hydrating

  • Modifications: Replace walnuts with almonds (cooler). Reduce feta or use light feta. Add extra cucumber slices for hydration. Use lemon juice instead of vinegar.
  • Dressing adjustment: Reduce honey, add more lemon juice and a little extra mint.
  • Why: The Choleric type needs cooling and hydration without heavy fats or excess sugar.

2. Melancholic (Cold & Dry) – Nourishing & Warming

  • Modifications: Add grilled chicken or quinoa for substance. Use full-fat feta and add extra olive oil. Replace mint with oregano (warm note).
  • Dressing adjustment: Increase honey/petemizi, add a pinch of cinnamon.
  • Why: The Melancholic type needs energy-dense, nourishing ingredients that provide warmth and “lubrication” for their naturally dry constitution.

3. Phlegmatic (Cold & Wet) – Stimulating & Drying

  • Modifications: Replace feta with a small amount of feta or omit it. Add radishes (sliced) and extra arugula. Replace walnuts with pumpkin seeds. Add fresh ginger (grated) to the dressing.
  • Dressing adjustment: Use extra vinegar and lemon juice, add a pinch of cayenne pepper, reduce honey.
  • Why: The Phlegmatic type needs spicy, drying ingredients that stimulate their slow metabolism and reduce fluid retention.

4. Sanguine (Hot & Wet) – Purifying & Anti-inflammatory

  • Modifications: Replace walnuts with almonds. Add extra berries (blueberries, sliced strawberries). Replace feta with light mozzarella or a small amount of feta. Add fresh basil.
  • Dressing adjustment: Use orange zest, reduce honey, add extra lemon juice.
  • Why: The Sanguine type needs cleansing, antioxidant-rich ingredients that cool and purify without heavy fats or excessive sweetness.
