Base Recipe (for 2 servings)
- 2 ripe peaches
- 6 ripe apricots
- 50g feta cheese (or anthotyro, plant-based cheese)
- 60g mixed greens (arugula, spinach, lettuce)
- ½ cup fresh mint, finely chopped
- 2 tbsp walnuts or almonds, roughly chopped
- 2 tbsp sunflower or pumpkin seeds
For the Dressing:
- 2 tbsp olive oil
- 1 tbsp apple cider vinegar (or balsamic)
- 1 tsp honey or grape molasses (petimezi)
- ½ tsp mustard

Method

3. Phlegmatic (Cold & Wet) – Stimulating & Drying
- Modifications: Replace feta with a small amount of feta or omit it. Add radishes (sliced) and extra arugula. Replace walnuts with pumpkin seeds. Add fresh ginger (grated) to the dressing.
- Dressing adjustment: Use extra vinegar and lemon juice, add a pinch of cayenne pepper, reduce honey.
- Why: The Phlegmatic type needs spicy, drying ingredients that stimulate their slow metabolism and reduce fluid retention.
4. Sanguine (Hot & Wet) – Purifying & Anti-inflammatory
- Modifications: Replace walnuts with almonds. Add extra berries (blueberries, sliced strawberries). Replace feta with light mozzarella or a small amount of feta. Add fresh basil.
- Dressing adjustment: Use orange zest, reduce honey, add extra lemon juice.
- Why: The Sanguine type needs cleansing, antioxidant-rich ingredients that cool and purify without heavy fats or excessive sweetness.
